Think Pink

October is Breast Cancer Awareness Month around the world, so let’s all ‘Think Pink’. Let it be a time to remember all the breast cancer survivors, pray for those that have lost loved ones, and support charities that are continuing the fight against this deadly disease. There are so many charities doing such wonderful work giving information to women and showing them how to check themselves. These charities also support families of those currently with breast cancer or those who have lost loved ones through the disease. Let us also support them this month.

Someone very dear to me is a ‘Survivor’. She found a lump through a random screening she did on herself one faithful morning. To cut the long story short, after the surgery and chemo, we thank God that things have been looking excellent.  It definitely wasn’t without a lot of prayer but God came through as He always does. I keep wondering what would have happened if she, like most of us, didn’t check herself that day, month or year.

Please, if there is only thing you do in contribution to this month’s Breast Cancer Awareness, let it be a personal check. It could be a self screening or you could go for a mammogram if you can afford it. When I was in Nigeria I know a number of mammogram centers that offered discounts during the month of October. If you rather a self check,  my doctor advises that the best time to check is 3 days after your monthly period has ended.

To be honest, I don’t want the breast screening to be the only thing you do this month. I want you to also make these beautiful, delightful mini donut muffins. Incase you are wondering about the spelling, the Americans say ‘Donut’ and the rest of the world says ‘Doughnut’…but when you are in Rome, you do as the Romans :-)

As with most things on this site, they are incredibly easy to make. Plus, there are no eggs, so if you know someone that has an egg allergy, it is the perfect treat for them. I wanted to make them themed, so I added pink food colour to the batter.

This is not my recipe. I actually got it from Allrecipes.com. The ingredient list consists of sugar, melted margarine or butter, milk, flour, baking powder, nutmeg and pink food colour (if using). One thing you would need though is a muffin pan (mini or regular) or a donut pan. I used a mini muffin pan.

The Ingredients

I used a pink gel colour. I only needed a drop in the mix. However, you can also use pink liquid colour. You would probably need half a teaspoon of the liquid pink colour. I used this gel one

Mix all the ingredients together and pour in your greased mini muffin pan (we are not using muffin paper liners for this recipe)

When these babies are done, they look gorgeous. Mine actually came out a bit small. Next time I make them (there would definitely be a next time!), I would double the recipe.

Dip or brush (I like them dipped…bring on the fat!) in butter and coat with your sugar. I made some pink sugar by  putting some sugar in a ziplock (or nylon) bag. Add a drop of pink colour and rub till the sugar is all coated. Like this..

Along with the pink sugar, I also made some cinnamon sugar.

And there you have it. The easiest donuts ever. Please try this recipe, you won’t regret it. And if you know anyone with an egg allergy, why not show them some love with these treats. It’s not very often they get to eat something this delectable because most baked goods contain egg.

Do a Self Examination This Month

Nigerian People The ingredients I have used today are regular ingredients you would get at any grocery store. If you would like the pink gel colour, they have them at Baker’s World on Allen Ave and Kogsy on Opebi. You can slo get them at Apongbon market in Marina. Donut Muffins

You can make these for your colleagues to do your part in creating awareness in your office.

Ingredients

  • For the muffins:
  • 1/2 cup or 100 grams sugar
  • 1/4 cup or 57 grams butter or margarine, melted
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup or 112 grams milk
  • 1 teaspoon or 2 grams baking powder
  • 1 cup or 120 grams all-purpose flour
  • A drop of pink gel colour or 1/2 teaspoon liquid colour
  • For the sugar topping:
  • 1/4 cup or 57 grams butter, melted
  • 1/2 cup or 100 grams white sugar
  • 1/2 teaspoon ground cinnamon
  • A drop of pink gel colour

Instructions

  1. Preheat oven to 375 degrees. Grease 24 mini-muffin cups.
  2. Mix sugar, butter, and nutmeg in a large bowl.
  3. Stir in the milk, then mix in the baking powder and flour until just combined. Add pink food colour.
  4. Fill each mini muffin cup about half full.
  5. Bake until the tops are lightly golden, 12 to 15 minutes. Mine were done in like 10 minutes because my batter was not much.
  6. While muffins are baking, prepare the ingredients for the topping.
  7. Place melted butter in a bowl.
  8. In another bowl, mix together 1/4 cup or 50 grams sugar with the cinnamon.
  9. Then in another bowl, mic 1/4 cup or 50 grams sugar with a drop of pink food colour.
  10. When the muffins are slightly cooled but still warm, dip each one in the melted butter, and roll in the sugar mixture.
  11. Cool and serve.
