The Engineer and I were driving around over the weekend and it was interesting to see how people have decorated their gardens and patios in preparation for Halloween.

Guys, I am talking about some SERIOUS designs here. One house had two giant blown-out cats which were bigger than a kids slide. Another house had three scary looking ghosts hanging down from trees. Many had simple designs done with pumpkin arrangements and simple white ghosts.

I really wish I had taken pictures but I wasn’t sure what the home owners would think. I think I would attempt taking pictures next time. Maybe when the Christmas decorations are out.

It just intrigued us the amount of time and effort people put into Halloween – doing up their homes, getting all dressed up, buying loads and loads of candy to give out. One conclusion we came to though was that it is a part of the ‘culture’ here. In Nigeria, we did not grow up with Halloween so it is difficult for us to relate to it. The same way it is difficult for an American to understand the fact that you had 500 guests at your engagement ceremony and probably double that number would attend the wedding. Cultural Differences!!!

Today’s treat is something I decided to whip up after seeing all those pumpkin lying around. They gave me the idea for these simple marshmallow treats that require only butter, marshmallows and rice krispies. Oh, added orange food color to get the full effect but you can do without it. I also used green icing to create the stems of the pumpkins.

I used jumbo marshmallows but you can use the mini ones as well.

Once you are done mixing, you could use an ice cream scoop to portion them out like I did. Or you just eyeball it and use your hands.

I honestly couldn’t stop eating these. They were so chewyly (is that even a word?!) good.

Nigerian People

I know we don’t celebrate Halloween, but this is a treat you can  make anytime. The kids would definitely enjoy making these as they can get their hands all messy while forming different shapes. I know Ebeano in Lekki has marshmallow in big jumbo sizes and the minis as well. The other ingredients are readily available in any grocery store.

Halloween Rice Krispies Treats

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 12 small balls

Halloween Rice Krispies Treats

This recipe makes a small batch. It is advisable to double or triple it for maximum satisfaction :-)

Ingredients

  • 2 tablespoons or 28 grams butter
  • 5 oz or 142 grams marshmallows
  • 3 cups or 90 grams Kellogg’s Rice Krispies cereal
  • orange food color (or a mix of red/yellow)

Instructions

  1. In a medium sized pot, melt butter over low heat.
  2. Add marshmallows and melt until smooth.
  3. Add food coloring and stir well. Remove from heat.
  4. Stir cereal into marshmallows and mix just until combined.
  5. Use ice cream scoop to portion the mixture and form into balls
