The Easiest Cupcakes Ever and A New Beginning

It’s been roughly about three months since we moved over to Houston from Nigeria and we are just about getting settled. Our sofa is due to arrive tomorrow so I am super excited. It’s not fun having to watch TV on a chair! It is more enjoyable snuggling up on your sofa with some cupcakes watching a late night movie like “Love Actually” (which by the way, is one of my favorite movies of all time).

In celebration of the arrival of our sofa and our new life in Houston, I have decided to make cupcakes. These are not just any cupcakes though, they are also to celebrate Nigeria’s Independence Day which is coming up in a few days. I get so jealous that the American’s are so proud of their ‘4th of July’ and ours just seems like another ‘public holiday’.

I don’t think its because we are not proud of our country, it is just that there are so many things on ones mind, you are just happy to have a day of not going to work! Whatever the case may be, let us all just try and say these three words (that are not just words but a prayer) on the 1st of October or everyday for that matter…GOD BLESS NIGERIA!

Ok, enough preaching…back to the cupcakes. These cupcakes are super easy and super moist. It took me less than 20 minutes to get them into the oven. And you don’t need a mixer! The only gadgets you need are a set of measuring cups or scale (preferably digital) and your oven. All other things you probably have at home….hmmm maybe with the exception of baking powder.

Now the ingredients: Flour, sugar, egg, milk, baking powder and butter. That’s it! And its not just butter, it’s melted butter. As I mentioned earlier, you don’t need a mixer and best of all, you don’t have to sit around waiting for it to come to room temperature. I added green colouring because I am making them Independence Day themed but you don’t need the colour.

Mix it all together, fill your cupcake pans, put in the oven, 12mins later, fantastic cupcakes, yayyyyyy!!!

Did I hear you say you don’t have any muffin pans?

That is not an excuse! Do you know why?

Why?

Because as long as you have a can, an oven safe glass dish or pot, you can bake this cake. Yes a pyrex dish works (yep, I have been asked this question before. you know yourself), yes a silicone mold works but the easiest tool you can get is probably sitting in your cupboard.

Of course I have got that covered as well. It is actually more of a glaze since we are not using a mixer. Three ingredients- milk, powdered sugar and vanilla flavoring (you can use some lemon zest to give it a zing!). Mix it all up and ….

Nigerian People You may be wondering were you can get measuring cups, you can check Baker’s World on Allen Ave or Kogsy on Opebi. Another great option is to check out Apongbon Market (best place to shop, if you can stand the heat and crowd) in Marina. I think they sell them for N250. I have no idea where you can get the digital scales but they might be available at Game in the Palms Mall. For the green coloring, you can definitely get them at Shoprite or the market. All the other ingredients can be picked up at your regular grocery store. Please buy PLAIN flour (not self rising).I am sorry I lived in Lagos so I only know shops in Lagos. The Easiest Cupcakes Ever…

These cupcakes are super easy and super moist. Enjoy!

Ingredients

  • 1 cup or 200 grams sugar
  • 1 1/4 cups or 180 grams flour
  • 1/2 tablespoon or 4 grams baking powder
  • 1/2 teaspoon or 2 grams salt
  • 1/2 cup or 113 grams unsalted butter melted and cooled
  • 2 large eggs or 110 grams weighed without shell
  • 1 teaspoon of liquid green coloring
  • 1/2 cup or 112 grams milk
  • 1 tsp vanilla flavouring or extract
  • Vanilla Glaze
  • 1/4 cups or 60 grams milk
  • 2 cups or 240 grams powdered sugar
  • 1 teaspoon of vanilla flavoring or extract

Instructions

  1. Melt the butter in the microwave for about 10/15 seconds.
  2. Prepare your cupcake pan or grease and flour your tin.
  3. In a big bowl, combine the flour, sugar, salt and baking powder dry ingredients.
  4. Break eggs into a small bowl and add the green colouring and vanilla flavoring.
  5. The butter should be cool.
  6. Preheat oven to 350 degrees F or 170 degrees C
  7. Add the cooled butter, egg and milk to the big bowl with the flour, sugar, etc.
  8. Mix it all together.
  9. Scoop the batter (you can use the 1/8 cup if you have a measuring cup set) in the cupcakes liners. You want it to be less than half so that after the cupcakes bake, there is still room for the glaze
  10. Bake for about 12-14 minutes or insert a toothpick until it comes out clean.
  11. Cool for frosting.
  12. To Frost, just spoon glaze over cupcakes.
  13. Vanilla Glaze
  14. Warm the milk in the microwave for about 10-15 seconds. Don't allow to boil
  15. Add milk and vanilla flavouring to powdered sugar and mix.
