The first advice I have for you regarding this recipe is that you should please double or triple it. I got 8 pancakes from the mix and they were definitely not enough for the Engineer and I.
You see, these are not just your ordinary type of pancakes. They are not made for eating one or two pieces. Oh no, they are the type you have to stack up high and drown in syrup. I am not talking about 2 stack here people!!! At least 4 but 6 would be ideal. (Can you tell I love food)
When we were younger, we made pancakes quite often but can’t even be compared to these ones. They were more like crepes. We would pour oil (a whole lot of oil) in the pan and then pour our batter……come to think of it, I would be right in saying they were Fried Crepes (yuck!). We enjoyed them though. Not knowing any better, we just enjoyed the fact that we could get a sugar rush from something that took little or no time to put together.
Now I know better. Don’t get me wrong, crepes are great, when made right, obviously, but PANCAKES, OH PANCAKES. They are just like ‘Mary Poppins’- Practically Perfect in Every Way.
Pour all your dry ingredients in a bowl. Add the wet ingredients. Whisk. And you are done. You can even mix everything in a blender if you can’t be bothered to mix by hand.
One of the biggest mistakes we always made as kids when making ‘our pancakes’ was the amount of oil in the pan. Please people, do not fry your pancakes!!! All you need to do is get some kitchen paper, dab it with a little oil and wipe your non stick pan with it.
Now you can pour your batter ( I used 1/4 cup per pancake). Set the burner to medium low heat.
Can you see those beautiful bubbles? They are telling you it’s time for a flip.
Doesn’t that look perfect?
After a few seconds, the other side would be done as well.
Now, if you want to take perfection a step further (if there is any such thing), you would need some of my cinnamon mixture…
Add a swirl of it to your pancake batter
And you have the Perfect Cinnamon Roll Pancakes
You really don’t need any syrup with this one but make sure you have them straight off the pan. They are just like cinnamon rolls but dare I say better. Not too sweet. Just right!

Everything on my ingredient list is readily available in most grocery stores and the market. For the cinnamon mixture, if you don’t want to have to buy brown sugar, you can replace it with regular white sugar. Try something new this Festive season. Your family would thank you for it.
Whether you have them plain or with the cinnamon swirl, they are great!
Ingredients
- 1 cup or 130 grams all-purpose flour
- 2 tablespoon or 24 grams sugar (if syrup or cinnamon mix would not be used, add an extra tablespoon)
- 2 teaspoons or 6 grams baking powder
- 1/2 teaspoon or 4 grams salt
- 3/4 cup or 180 grams milk
- 1 large egg (about 50 grams without shell)
- 2 tablespoons or 28 grams melted butter (oil may be used as well)
- 2 tablespoons or 28 grams unsalted butter, melted
- 1/8 cup or 27 grams brown sugar (regular sugar may be used as well)
- 2 teaspoons or 6 grams flour
- 1 teaspoon or 2 grams ground cinnamon
Instructions
- In a medium bowl, stir together the melted butter, brown sugar, flour and cinnamon.
- Microwave for about 15-30 second. As it cools, it would thicken
- Scoop the filling into a cellophane/nylon bag and set it aside
- Whisk together flour, sugar, baking powder and salt in a bowl.
- Whisk in the milk, egg and melted butter until only a few lumps remain.
- Let the batter stand for 5 full minutes for extra fluffiness.
- Heat a non stick frying pan over medium heat
- Using a paper towel dabbed with oil, coat the pan lightly
- Pour about 1/4 cup of batter into the hot pan.
- Cook until bottom is bubbles appear on top and the bottom is browned, about 90 seconds
- Flip and cook until the center of the pancake is set and the other side is done.
- Stack up a minimum of 4 layers and drown with syrup.
- Enjoy!
I have the privilege of being neighbors to this super talented lady and she has really indulged my sweet tooth lately. I will be making these mouth watering pancakes on valentines day ( breakfast in bed) but it’s a surprise so please don’t tell him, lol. I’m actually gonna try the cinnamon mix with it, wish me luck and I will let you know how it goes.
