Pink Lemonade Gummies

This post would conclude my ‘Think Pink’ Breast Cancer Awareness series. I would like to again, encourage all those who have not yet done a self check to please do so.

If you are like the ‘old’ me, you might have this notion that ‘what you don’t know won’t kill you’, right? It always seemed  to me that people  died not long after they found out they had cancer. Some would be gone within even a month of discovering the disease. And I convinced myself that maybe if they never found out, they might have lived longer.

For years, I believed so much in this, and I never did a self check. Partly because I was also scared of the unknown. Thank God I am older and hopefully wiser. I now check myself every month unfailingly because it is the sensible thing to do and because it can save my life.Please check! I cannot emphasize it enough. It is important and it could save your life.

Today’s treat is simple and playful. It requires a silicone mold but if you don’t have one, you could just use a glass dish. They are gummies. very similar to the texture of Haribo and Gummy bears. And you can make them with any type of juice. If you have kids, this is something fun you can make with them using their favorite juice. If you are using a glass dish, once the gummies have set you can use a cookie cutter to cut out fun shapes.

I took a cup of the pink lemonade from my previous post, added some sugar, added gelatin, heated it up and poured it in my silicone mold. That is all! You can substitute the pink lemonade with any drink you like but you would have to taste to check for sweetness. Aren’t they so pretty???

Easy Pink Lemonade Gummies

Easy Pink Lemonade Gummies

Ingredients

  • 1 cup or 220 grams Pink Lemonade
  • 1/4 cup or 50 grams sugar
  • 1 1/2 tablespoon or 12 grams gelatin

Instructions

  1. Pour juice into a pot and add the sugar. Stir to dissolve the sugar completely (heat if needed then refrigerate to cool)
  2. Once cool, add the gelatin and leave till the mixture has thickened. About 5 minutes.
  3. Place the pot with the mix over medium heat stir until the gelatin has melted and dissolved completely.
  4. Pour into your mold or glass dish.
  5. Cool in the refrigerator for about 30 mins to an hour.
  6. Unmold and enjoy.
