Christmas is a very exciting time of the year for me. I just love Christmas. I don’t know how to explain it. I am just filled with JOY and nothing can upset me.

When we were much younger, we spent our Christmas Day with extended family. My uncle (God Bless his Soul) always threw a big party because it was his birthday and everyone gathered at his house for lunch….and dinner. Hmmm, I still remember the Turkey *drool*. The only meal we had at home was breakfast.

My mum would make us set the table while she made breakfast – we (my siblings and I) actually really hated doing this. Why couldn’t we just eat breakfast in front of the TV!!! Why did we have to be all posh about breakfast. Thank God I am now older and wiser. Those are the moments you cherish and remember about your childhood. My kids are DEFINITELY going to have breakfast on a set table on Christmas morning (By God’s Grace).

Breakfast on Christmas or even New Year’s day should be different. By adding something that is not the norm can make a world of difference to your loved ones. My mum always made an egg dish that was like baked eggs with potatoes and vegetables. We loved it and she only made it on special days. Yes, it was egg, but it was a different kind of egg and I still remember it to this day.

This week, I would like to share with you three very simple meals you can add to your breakfast menu for the festive season. They all require very few ingredients and little preparation time.

Ham Tomato Cheese Croissant

The first time I had today’s Ham Cheese and Tomato Croissant was at PRET-A-MANGER in London. It just blew my mind. I went back again the next day for another one. It is that great. I can guarantee you that my trips to London would always include a stop at PRET.

On a side note, I actually have a long list of  ‘Must Eat Anytime I am In London’. I would be sharing this list with you in various posts. To wet your appetite, I would share with you some of the goodies on my list: M & S Raisin Scone, SP8  (anyone that was in Jesus House or North London definitely knows what I am talking about), Sainabury’s Cinnamon Raisin Bagel (the best!), and so on.

Anyway, back to the Ham Cheese and Tomato Croissant. You would need some puff pastry, any ham of your choice, any melting cheese of your choice, tomatoes, some seasoning and an egg.

Nigerian People Puff Pastry is available in the freezer section at SPAR, Shoprite, Goodies and probably Mega Plaza. You can also get your ham and cheese from these grocery stores. You can use foil paper to line your baking pan before baking or just bake in a pyrex dish.

Cook Time: 20 minutes

Total Time: 35 minutes

Ham Cheese and Tomato Croissants

This would bring a smile to any face on Christmas Morning.

Ingredients

  • 2 sheets Frozen Puff Pastry, thawed in fridge
  • 6 slices thinly sliced Ham
  • Thinly sliced cheese, chopped or use grated cheese
  • 1 Tomato (about 140 grams)
  • 2 teaspoons or 6 grams flour or cornflour
  • Maggi or seasoning of choice
  • 1 Egg
  • 1 teaspoon Water

Instructions

    For the Tomato Sauce
  1. Peel the skin off the tomatoes. Dice the tomatoes into little pieces and microwave for 30 seconds. Add the flour and seasoning and microwave for another 30 seconds. Leave to cool.
  2. For the Pastry
  3. Lay puff pastry on lightly floured surface, roll out slightly with a rolling in or a bottle
  4. Cut into quarters
  5. On each square, lay a slice of ham, some of the tomato sauce and then sprinkle on some cheese
  6. Overlap two opposite ends and lay on a lined baking sheet.
  7. Beat together egg and water. Brush tops of pastry with mixture.
  8. Put back in the fridge for about 20 mins to get cold. (you can also make a day ahead and just leave in fridge till you are ready to bake)
  9. Preheat oven to 425
  10. Bake for 16-18 minutes or until golden brown.
  11. Serve immediately.
