Happy New Year People.

I am so sorry this is my first post for the year. To be honest, I can’t even believe January is gone! I was trying to reflect on the things I did in January and all I remember doing dishes, cooking and doing some more dishes. This is definitely not how I envisioned my ‘life in America’. I need to inject some excitement  into my life.

On the first of January, I made some resolutions (as we all d0). I had the usually suspects on the list…..lose weight, pray more, read my bible everyday, become a better person, bless people… And I also had some not so usual suspects…..go on a cruise (since the outbreak of viruses on a few cruise lines recently, this is looking more unlikely), visit Thailand and some others I would keep to myself for now, but I may share them with you soon…………you can keep guessing what they are.

Well, just in case you are wondering, I have actually put on weight since I made the resolution. At least thank God I am reading my Bible and praying more . Hmmm, I need to add losing weight to my prayer points. Need a way to bind the calories in all these goodies I make.

Anyways, let’s talk about Valentine’s Day. I love Valentine’s Day. Another day to RECEIVE gifts, yayyyy!!!!!!! Ok, this is what I am trying to change about myself. I need to start becoming more excited about GIVING gifts.

If you are looking to make only one thing on Valentine’s Day or just looking to make one thing on this blog, this is it!!! I honestly did not expect these to be as awesomely good as they were. They completely blew my mind. I had to hold myself from eating the whole tray. I actually preferred them plain (without the cream cheese frosting, so you don’t need the frosting).

I really wish I could describe how good they were but words fail me. I would have them over red velvet cupcakes anytime, any day (but then again, I am agege bread kinda girl).

I mixed it all by hand the night before I needed them. Took them out of the fridge.

Rolled them out. Rubbed with butter and sprinkled on the cinnamon sugar (this is probably the most difficult thing you have to do. (If you don’t have a rolling pin, you can use your hands to spread them out or use a bottle.)

Cut them with a knife. About 1.5 to 2 inches

After an hour, they had swollen up really good. (put them in a warm place- either a counter top if the room is warm or an oven or a cupboard).

Pop them in the oven for 20 mins and BAM!

While they are still hot, you can smother them with cream cheese frosting (if using).

Yeast and flour are also available in these places. Please buy plain all purpose flour NOT Self rising flour. You are going to love these :-)

Red Velvet Cinnamon Rolls

Yield: 12 Rolls

Red Velvet Cinnamon Rolls

Divine Red Velvet Cinnamon Rolls

Ingredients

  • Half a box or 234 grams red velvet cake mix (I used Duncan Hines Signature)
  • 1 1/2 teaspoons dry yeast
  • 1 1/4 cups or 300 grams warm water
  • 1 teaspoon or 4 grams salt
  • 1 teaspoon vanilla extract
  • 2 1/2 cups or 325 grams flour
  • Cinnamon Filling
  • 1/2 cup or 113 grams softened butter
  • 1/3 cup or 75 grams brown sugar
  • 1/4 cup or 50 grams white sugar
  • 3 teaspoons Cinnamon
  • Cream Cheese Frosting
  • 8 ounces or 113 grams softened cream cheese
  • 1/4 cup or 57 grams softened butter
  • 2 cups or 240 grams powdered sugar
  • 1 teaspoon of pure vanilla extract
  • Pinch of kosher salt

Instructions

  1. Combine dry yeast with warm water in the bowl. Stir and leave for 10 mins or until bubbly.
  2. Add cake mix, flour, vanilla and salt.Mix till it comes together and forms a dough.
  3. Cover with cling film/plastic paper and allow to proof overnight in the refrigerator.
  4. The next day, flour on a clean surface and turn dough out.
  5. Roll into a rectangle shape, about 18×12.
  6. Spread softened butter over dough. Sprinkle with brown sugar, white granulated sugar and cinnamon. Start from farthest edge and roll dough tightly into a long skinny log shape. Slice into 12 rolls.
  7. Place rolls in a 9×13 pan that has been greased with butter, or sprayed with non stick cooking spray. Let rise a final time in pan for an hour.
  8. Bake at 350 degrees for 20 minutes.
  9. Cream cheese frosting.
  10. Combine room temperature butter with powdered sugar.
  11. Mix until well combined, then add vanilla and pinch of salt.
  12. Finally add the cream cheese.
  13. Spread on warm rolls
  14. Enjoy!
